GISELLE AND NELSON DO THEIR ICECREAM A BIT DIFFERENT SO THERE IS MUCH FLAVOR FOR INSTANCE THEY ACTUALLY MAKE THE CHOCOLATE BY GRINDING CACAO NIBS ALONG WITH ORGANIC COCO POWDER. THE MAPLE SYRUP IS USED FROM US BUT GISELLE ACTUALLY COOKS IT DOWN MORE TO CRYSTALIZE IT THEN ADDS IT TO THE ICE CREAM. GISELLE MAKES HER OWN EVAPORATED MILK USING THE GUERNSEY COW MILK AS THIS IS ANOTHER ADDED INGRIDIENT THAT IS USED WHEN MAKING THE ICECREAM ALL INGRIDIENTS COME FROM UDDERMILK. ALL MILK USED FOR THE ICE CREAM IS FROM THEW GUERNSEY COWS MUCH TIME AND EFFORT IS PUT INTO MAKING THIS AMAZING ICECREAM ITS REALLY PACKED FULL OF FLAVOR I LIIKE IT ESPECIALLY WHEN LEFT AT ROOM TEMPERATURE FOR 5 MINUTES THEN WHIPPING IT WITH MY SPOON INTO A GELATO TEXTURE. PLEASE NOTE THAT MOSTLY ALL RAW MILK ICECREAM MADE FROM RAW MILK AND CREAM IS REALLY SUPER HARD WHEN FROZEN.IM STILL NOT SURE WHY I HAVE BEEN TRYING TO FIGURE THIS ONE OUT CAUSE THE ORGANIC ONE IN THE STORE HAS JUST CREAM ,EGGS YOKES,MILK THATS IT. AND THAT ONE IS SOFTER.IT MUST BE THE TEXTURE OF RAW FRESH CREAM AND MILK IM NOT SURE. BUT THOSE 5 MINUTES WAITING TIME OF THAWING OUT ARE DEFINITLEY WORTH THE WAIT !!! GISELLE AND NELSON WILL SOON BE EXPANDING TO A BIGGER KITCHEN THEY ARE VERY HAPPY. THEY MAY JUST HAVE SOMETHING HERE..A NICHE IN THE MARKET FOR SURE,SOMETHING NO ONE ELSE HAS DONE BEFORE . SO THERE IS A BIG NEED FOR THIS GOD WILLING.
